It’s time to share another recipe that has been making its way into our dinner rotation over the past few months. I don’t know about you, but when the pizza craving strikes, it’s hard to say no. Because many people can’t tolerate gluten, dairy, and even grains, it makes it challenging to find a substitute that tastes delicious and still meets our dietary needs. Well, look no further. This “Quick & Easy Pizza Stuffed Mushroom” recipe fits the bill.

It’s easy to customize too, depending on your dietary preferences. If you prefer ground beef to ground turkey, it’s a simple swap. If you can tolerate grass-fed dairy, sprinkle some raw cheddar on top of the mushroom and let it broil for a few minutes. If you want to include even more veggies, simply saute some shredded zucchini in a separate pan, or bake some sliced eggplant in the oven, and give each pizza a nutritional boost.

Life is about figuring out what works for YOU, and going with it. One of the easiest ways to be successful in any long-term, lifestyle change related to bettering your overall health is being adaptable and finding out what works for your specific body and goals.

There are many people that still fight with their bodies, consuming foods that don’t elicit a positive response, but do it and “suffer” the consequences because it “tastes good.”

I encourage you to take a different approach. Instead of fighting this uphill battle that, eventually, will end poorly, take the initiative to play around in the kitchen and try new meats, vegetables, sauces and recipes that make your body feel good.

If you don’t tolerate dairy very well but keep “forcing it” because you could never give up your beloved coffee creamer, bowl of yogurt or Margherita pizza, I challenge you to remove it for 30 days and experiment with finding real-food substitutes that DO work for your body.

Instead of cheddar cheese, try sprinkling some nutritional yeast on top of your pizza sauce with a little extra crushed garlic, fresh basil and pink sea salt. Chances are, once you try it (and give yourself time to appreciate the taste with an open mind), you will start to find more swaps that deliver on the “satisfaction meter,” and don’t make you feel crummy.

Now, let’s dive right into this recipe!

Quick & Easy Pizza Stuffed Mushrooms

(Grain-Free, Dairy-Free, Egg-Free, Nut-free, Grain-Free)

Ingredients:

  • 1 pound of ground turkey, organic if possible (feel free to swap sausage, ground beef or chicken).
  • 1 jar of your favorite tomato sauce (watch for added sugar) or, make your own.
  • 6 large mushroom caps, rinsed, scrubbed and dried.
  • 2 cups of spinach
  • 1/4 cup nutritional yeast (NOT brewer’s yeast)
  • 2-3 clove of fresh garlic (or garlic powder)
  • 1/4 cup fresh basil, chopped finely
  • Himalayan pink sea salt, to taste
  • 1-2 tablespoons of high-quality oil (think: coconut or avocado)

Directions:

Preheat the oven to 400 degrees F. While the oven is preheating, lightly grease a baking sheet with a high-quality oil such as coconut or avocado oil. Be sure your mushroom caps are rinsed, scrubbed and dried to remove any excess dirt and bacteria.

In a separate pan, saute your ground meat until cooked through. Once cooked, add 2 cups of spinach and saute until wilted. Remove mixture from heat.

In each mushroom cap, add a few tablespoons of the meat and spinach mixture to fill the cap size. Add your favorite marinara or pizza sauce to each mushroom cap. Sprinkle a few tablespoons of nutritional yeast on top of each mixture. If using garlic powder, sprinkle amongst the mushroom pizzas. Sprinkle a 1/2 tsp of sea salt.

Bake for 20-25 minutes or until mushrooms are super tender and cooked through. Once done, remove from oven and top with a little more nutritional yeast, sea salt, and chopped fresh basil.

Serve warm, or store in an air-tight container and eat within a day or two.
